Recipe: Veggie Paella
Simple meal for vegetarians or filling side dish

What's For Dinner?


This deceptively easy recipe boasts a balance of flavor and nutrition. When you need a rice and/or vegetable dish, this recipe combines the two, making a nice change.

Makes 8 servings

PaellaIngredients:

1 tablespoon olive oil
1 cup chopped onion
1 red bell pepper, cored and chopped
1 cup sliced mushrooms
1 teaspoon minced garlic
2 (5-ounce) packages yellow rice
1 cup chopped tomatoes
1 (15-ounce) can black beans, rinsed and drained
1 (10-ounce) package frozen peas, thawed
1/2 teaspoon paprika
1 teaspoon dried basil leaves

Directions:

In large nonstick pot, heat oil, sauté onion, red pepper, mushrooms, garlic 5-7 minutes.

To sautéed mixture, add rice and water according to package directions, bring to a boil. Reduce heat, cover, cook 20-25 minutes or until rice is done.

Stir in tomatoes, black beans, peas, paprika, basil until well heated.
