If you’re like me, when you think of tofu, you think of a bland wiggly square that may be good for you, but you’re clueless as what to do with it.
I had no idea at all that tofu could be used as a substitute for cream or egss when baking. Since it’s lower in fat and other bad things, you can put it in dips, dressings and anything else you’re making. Tofu absorbs the other flavors in your dish. It lowers the calories, reduces the fat, but retains the flavor and texture of the original recipe. Plus it’s actually good for you!
Here’s three recipes that you can use all summer long.

House Foods’ Tofu Caesar Salad Dressing

½ (7 oz) block House Foods Premium Tofu Soft or Organic Tofu Soft, drained
2 teaspoons olive oil
1 clove garlic
½ teaspoon Worcestershire
3 tablespoons Parmesan or Pecorino Romano (finely grated)
1 ½ teaspoons anchovy paste
3 tablespoons fresh lemon juice
¾ teaspoons salt
(Optional: ground black pepper to taste)
Cut tofu in half and place one half in blender. Store remaining half in refrigerator. Place all remaining ingredients in blender or food processer and blend until smooth.
Serve on salad or with finger-food.
Makes approximately 7 oz. of dressing
