Smoky Tomato Salad & Mango Madras Cocktail

Start to Finish: 20 minutes, makes 6 servings
Ingredients for Parmesan Vinaigrette:
1⁄2 cup olive oil-and-vinegar salad dressing
1⁄4 cup grated Parmesan cheese, DiGiorno®
2 teaspoons Dijon mustard, Grey Poupon®
3 drops liquid smoke
For Tomato Salad:
6 medium tomatoes, cut into chunks
8 ounces fresh mozzarella, torn in pieces, Cantaré®
15 fresh basil leaves, finely chopped
Salt and pepper
Preparation:
1. For the parmesan vinaigrette, in a medium bowl whisk together salad dressing, Parmesan cheese, mustard, and liquid smoke.
2. In a salad bowl, combine tomatoes, mozzarella cheese, and basil. Pour parmesan vinaigrette over salad and toss to coat. Season with salt and pepper to taste. Serve immediately.
Mango Madras Cocktail
Makes 1 drink
Ingredients:
2 ounces cranberry juice, Ocean Spray®
2 ounces orange juice
11⁄2 ounces mango rum, Captain Morgan® Parrott Bay Mango
Ice cubes
Orange wedges
Maraschino cherries
Preparation:
1. In a glass, combine cranberry juice, orange juice, and rum. Add ice. Garnish with orange wedges and maraschino cherries.
