What's for Dinner?

Serves 8

Ingredients:

Quebec Breakfast Creton1/4 pound bacon, cut into small bits
1 pound ground pork
1 large yellow onion, chopped
2 cloves garlic, minced
salt and pepper
3/4 cup heavy cream
1/2 cup breadcrumbs

Directions:

1-In a large sauté pan, fry the bacon and ground pork and cook about 4 minutes.

2-Add the onions and garlic, and cook for a few minutes until the pork is no longer pink. Season to taste with salt and pepper.

3-Add the cream and bread crumbs and cook for about 5 minutes over medium heat, stirring to break up the meat.

4-Reduce the heat to low, cover, and cook, stirring occasionally, until most of the liquid has evaporated, about 1 hour.

5-Remove the lid and simmer uncovered, stirring occasionally, until the mixture is thick and all the liquid is evaporated, about 15 minutes.

6- Transfer to a serving bowl or ramekins, smoothing the top with a rubber spatula. Cover with plastic wrap and refrigerate until firm, at least 4 hours or overnight.

7- Serve with warm toast.
