Pork tenderloin with artichokes & mushrooms

Here's a tasty dish for those who love their protein. Serve it with a side salad or green vegetable for a lean, low carb and delicious meal!

Serves 4

½ lb pork tenderloin, raw, sliced ¼ inch thick (or raw chicken)
1 Tbsp olive oil
1 medium onion, sliced
1 lb fresh sliced mushrooms or 8 oz canned slice mushrooms
14oz canned artichokes, quarter
2 crushed garlic cloves
1 Tbsp fresh rosemary (or ½ Tbsp dried)
2 Tbsp fresh parsley (or 1 Tbsp dried)
½ c chicken broth or white wine

Sauté pork in oil over medium heat with onions until golden brown; add garlic, mushrooms & artichokes. Cook until vegetables are cooked through and season to taste with salt, pepper, rosemary and parsley. Add broth or wine and simmer for 5 minutes for the flavors to mix and to make a thin sauce. Serve over polenta, noodles or with boiled potatoes.

i love artichokes and have never thought of pairing them with pork tenderloin. will have to try it.
