Recipe: Pineapple and Red Pepper Pork Skewers with Peanut Sauce
Do you like pork? Good. Pineapples and peanut sauce? Even better.

These skewers plate beautifully and are perfect for a casual meal. Chicken, beef, or even salmon can easily be substituted for the pork.

Prep time 15 minutes, Cook time 10 minutes, makes 4 servings

Pineapple and Red Pepper Pork Skewers with Peanut SauceIngredients for Skewers:

1- to 1½-pound pork tenderloin, silver skin trimmed and cut into 1½ -inch pieces

1 tablespoon soy sauce

1 tablespoon honey

1 medium red bell pepper, cut into 1½-inch pieces

9 ounces pineapple, cubed (1½ cups)

4 to 6 12-inch metal or wooden skewers

Ingredients for Peanut Sauce:

½ cup smooth peanut butter

½ cup chicken stock or water

1 tablespoon brown sugar

2 tablespoons soy sauce

2 tablespoons lime juice

¼ teaspoon crushed red pepper

Preparation:

1. To prepare the sauce, combine ingredients in a small bowl and whisk with fork until smooth; set aside. If using all-natural peanut butter, adjust consistency using more or less stock or water.

2. Preheat grill or grill pan to medium-high heat. Toss pork cubes with soy and honey; season with salt and pepper. Alternately thread pork, pepper, and pineapple onto skewers. (If using wooden skewers, soak for 15 minutes before using.)

3. Oil the grate of your grill, then sear the skewers 2 minutes on all four sides, or until pork reaches an internal temperature of 145°. Remove from grill and serve with prepared sauce.

Made this last night, f'n delicious!!! The peanut sauce recipe is easy and really yummy, good with this or as a sauce for any of your fave dishes that call for it. :)
