Mediterranean Salmon with Orzo Primavera
You know salmon is good for you - here's a way to make it taste great!

Mediterranean Salmon

This recipe is quick, light, and delicious. And did we mention it is healthy, too?

Ingredients:

1 package of Sea Cuisine Mediterranean Salmon

1 cup of orzo

Olive oil

1 tsp chopped garlic

1/2 cup diced onions

1/2 cup chopped fresh spinach

1 Roma tomato

1 small can of sliced black olives

3 basil leaves

1 tsp butter

Directions:

1. Cook 1 cup of orzo (up to 1 day ahead of time), drain and place under running cold water. Drizzle with olive oil to prevent clumping and store in an airtight container, in the fridge, until ready to use.

2. Bake Sea Cuisine’s Mediterranean Salmon as directed on package. About 10 minutes before you plan to eat, in a large skillet or sauté pan, heat a tablespoon of olive oil over medium heat. Sauté 1 teaspoon of chopped garlic with 1/4 cup of diced onion. Stir frequently until the onions are translucent.

3. Then add a handful of fresh spinach, a diced Roma tomato, a small can of sliced black olives drained and 1 torn basil leaf. When the spinach begins to wilt, toss in the cooked orzo pasta with 1 tsp of butter and stir until combined mixture is warm.

4. Spoon mixture onto the center of your plate and place the cooked Sea Cuisine Mediterranean Salmon right on top. Garnish with basil leaves for flair!
