When I was younger, I used to rush off the school bus so I could sit on the couch with a box of Teddy Grahams and chocolate milk and watch my favorite show, Full House. Sure, it wasn't the greatest afternoon snack, but then again, my mom didn't have the time to make a healthy and elaborate afternoon meal. The tasty-but-fake food in a box would just have to do.
Coincidentally, Lori Loughlin (who played Becky Katsopolis on Full House, and is currently on The CW's 90210) has this same problem with her kids. She has picky eaters at home and can't seem to find fast and easy recipes to make for her family. She needs help – and luckily, celebrity chef and Food Network star Bobby Flay has just the solution.
The two have teamed up together with Hellmann's for The Real Food Project, an initiative created to help Americans get real about what we eat by offering simple, easy, and inexpensive recipes everyone will enjoy.
To learn more about the project, we caught up with Bobby and Lori to see what exactly these recipes entail and who can make them. Watch our video interview below to see what they had to say:
Below you'll find Bobby's recipe for crispy chicken breasts that Lori mentions in the video. Whether you're cooking for a large family, for a date, or just for you, this is definitely a simple, healthy and tasty dish to make tonight.
Italian-Style Baked Crispy Chicken Breasts
Makes 4 Servings (Prep time: 15 minutes, Cook time: 30 minutes)
Ingredients:
2 Tbsp. olive oil, divided
1 cup Hellmann's® or Best Foods® Real Mayonnaise
2 cloves garlic, finely chopped
1 Tbsp. finely chopped fresh rosemary
2 tsp. grated lemon peel
2 Tbsp. lemon juice
1/2 cup panko bread crumbs
1/4 cup finely chopped almonds
1/4 cup grated Romano or Parmesan cheese
4 boneless, skinless chicken breasts (about 1-1/4 lbs.)
Preparation:
1. Preheat oven to 375°. Grease 11 x 7-inch baking dish with 1 tablespoon olive oil; set aside.
2. Combine Hellmann's® or Best Foods® Real Mayonnaise, garlic, rosemary and lemon peel in small bowl. Remove 1/2 cup; reserve. Stir lemon juice into remaining mixture; refrigerate.
3. Combine bread crumbs, almonds and cheese in small bowl. Season, if desired, with salt and black pepper.
4. Season chicken, if desired, with salt and pepper. Arrange chicken in prepared baking pan. Brush one side chicken with reserved mayonnaise mixture, then evenly top with bread crumb mixture. Drizzle with remaining 1 tablespoon olive oil. Bake 25 minutes or until chicken is thoroughly cooked. Serve with refrigerated mayonnaise mixture.
