6 Columbus Day Cocktails

Celebrate the holiday tonight with a tasty rum or sambuca cocktail at dinner.

Today is Columbus Day! When we were kids, we had to learn about the Nina, the Pinta, and the Santa Maria. As adults, we have the day off and spend the day tackling crowds and getting the best deal at all the Columbus Day sales.

Tonight celebrate two intrepid explorers: Christopher Columbus and you! Columbus for leaving the safe confines of Spain and striking out towards the New World and raise a glass to yourself! You braved the mall and came home with some sweet deals.

Coconut Cruise

Ingredients:

1 1/2 ounces Bacardi Island Breeze Coconut

4 ounes cranberry juice

juice of half lime

1/4 ounce triple sec

Club soda

Garnish: lemon twist

Directions

Mix coconut rum, cranberry juice, lime juice and triple sec in a cocktail shaker with ice. Strain into a highball glass over ice. Top with club soda and garnish with lemon twist.

Viva Italia

Ingredients:

1/2 ounce. mint flavored vodka

1/2 ounce Molinari Sambuca Extra

1 ounce whisky cream

Directions

Gently pour into the glass the ingredients – following the order above – in order to obtain three different and well defined layers.

Columbus Cocktail

Ingredients:

1 part light rum

1 part apricot brandy

1 part lime juice

Directions:

Fill a shaker with ice cubes. Add all ingredients. Shake and strain into a chilled cocktail glass.
