What's for Dinner?

You can put almost anything in this meatloaf. Really! The secret is in the proportions and based on the fact that if you like the individual ingredients, you'll like the mix. The crazier the combination of ingredients the better. No kidding!

Add your left-over breakfast favorites---pancakes, oatmeal, bacon ... it'll taste great! Add your left-over lunch---grilled cheese or baloney sandwich, mac & cheese ... it'll taste great! ... add your favorite condiment, sauce or soup... it'll taste great!

You can add almost anything - except the kitchen sink!

Ingredients:

1 Vidalia onion, finely minced
1 large egg
1 1/2 pounds lean ground meat such as beef, lamb, pork, or turkey
1 cup of diced bready stuff (pancakes, cooked oatmeal, breadcrumbs, left-over grilled cheese or baloney sandwich, non-sugary breakfast cereals, crackers, etc.)
3/4 cup of your favorite liquidy stuff (ketchup, barbeque sauce, tomato sauce, can of condensed cheddar cheese soup, etc.)
1 tablespoon of your favorite dried herb (parsley, basil, sage, etc)
Salt and pepper to taste

Directions:

-1-Preheat the oven to 350 degrees F.
-2-Put all the ingredients in a large bowl and mix.
-3- Plop out the meatloaf onto a baking pan and shape into a rectangular loaf or into any shape you like!
-4- Bake for 50 to 60 minutes until the meat is cooked through and an instant-read thermometer inserted into the center of the loaf reaches 160 degrees F.

Quick Tip:

It's really disgusting touching raw chopped meat ... especially after you add a raw egg and other gunk. But I have a great trick to keep your hands from touching the yucky stuff. Wear plastic sandwich bags on your hands ... instant kitchen gloves!
