What's for Dinner?
Pork Tenderloin

This recipe is from Everyday Food. My husband actually told me when we made it that this was what he expected when he ordered teriyaki at a restaurant. It's that good.
Ingredients:
1/4 c. soy sauce
1/4 c. rice vinegar
1 T. fresh lime juice (i use bottled)
1 T. vegetable oil - plus more for grates
1 t. fresh grated ginger (if you don't know this tip, it's a good one -- keep ginger root in the freezer to keep fresh, then you don't have to buy more every time a recipe calls for fresh ginger)
1 pork tenderloin (about 1 lb.)
Directions:
1. Mix together and pour over pork. Marinade at room temperature for 30 min. or overnight in the fridge.
2. Cook on the grill 18 - 20 minutes; let rest for 5 minutes before serving.
