Apple Meat Loaf
A twist on comfort food

After all the election anticipation and angst, I find myself craving comfort food. I'm not a big lover of meatloaf; in fact, it was my nemisis growing up. But I've grown to appreciate some versions that incorporate a little twist - in this case, apples. The recipe comes from The Old Farmer's Almanac Everyday Cookbook.
Ingredients:
1 large onion, finely chopped
1 Tablespoon butter
2 ½ pounds ground beef
2 cups peeled, cored and chopped apples
1 ½ cups dry bread crumbs
3 large eggs, beaten
¼ cup ketchup
1 Tablespoon mustard
1 Tablespoon chopped fresh parsley
1 teaspoon salt
½ teaspoon pepper
¼ teaspoon ground allspice
Directions:
Preheat the oven to 350 degrees. Grease a 14x10-inch baking pan. In a skillet, sauté the onion in butter until soft. Combine the remaining ingredients in a large bowl and add the cooked onion. Using your hands, mix together until thoroughly blended. Press the mixture into the prepared pan and bake for 1 hour. Let stand 15 minutes before serving.
